Will I sound like a broken record if I say you have to include Dad’s Gulliver’s Corn Recipe on your Thanksgiving menu? I feel like I already said that about my Mom’s Classic Stuffing Recipe. That’s how attached I am to my classic Thanksgiving recipes. Oh yes, and all of our pie recipes we make too. And again, if you need some table setting inspiration head to my Ladies Fall Brunch.

This recipe came to be when my Dad needed to bring a dish to a potluck. He ended up finding this recipe and we’ve been eating it ever since.

And I will say we’ve hosted plenty of Thanksgivings and Friendsgiving and this has been the most requested Thanksgiving recipe. It’s creamy, delicious and amazing. Everyone will like it – trust me.

Let’s get to it! Round up your super, easy, basic ingredients for my Dad’s Gulliver’s corn.

You’ll need to heat the dutch oven and melt the butter. Then you’ll add the flour and cook for a couple of minutes. Make sure to stir it frequently so your mixture doesn’t burn or turn brown.

Next up you’ll add the milk, whipping cream, salt, sugar and pepper. You’ll notice that it will be thin. So then you’ll need to simmer that until it gets thick, about 5-10 minutes. See how it coats the spoon now?

Next up, stir in the corn.

Then you’ll pour the mixture into a casserole dish and top it with Parmesan cheese. This will give the casserole and an awesome, cheesy topping.

Broil the cheese until it’s nice a golden brown, about 10 minutes. Keep a close eye on it because broiling items can go from brown to burnt in an instant!

Now you could put this into an 8×8 pan, but we like to put it in a 9×13 casserole dish so everyone can get the melted, yummy cheese topping.

Gulliver’s Corn Recipe

Serves 6 – 8

Ingredients

  • 2 tablespoons melted butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 cup whipping cream
  • 1 teaspoon salt
  • 4 teaspoons sugar
  • Pinch of white pepper
  • 2, 16-ounce packages frozen corn, thawed
  • 1 cup Parmesan cheese

Directions

  1. Make sure your corn is thawed.
  2. Preheat the oven to broil.
  3. Heat a large dutch oven pot on medium.
  4. Melt the butter.
  5. Once completely melted, add the flour and cook for 1-2 minutes. Stirring frequently – making sure not to brown it.
  6. Add the milk, whipping cream, salt, sugar and white pepper. Simmer until thick – stirring frequently. About 10 minutes.
  7. Stir in the corn.
  8. Pour the mixture into a 9×13 casserole pan.
  9. Sprinkle with Parmesan cheese.
  10. Broil until brown and bubbly, about 5-10 minutes. Make sure to keep an eye on it so it doesn’t burn.
  11. Let cool for 15 minutes.
